I've been looking and a feature we are looking for is a way to attach notes to a meeting from each attendee if they want.

For example, they sit in the meeting and log into Vtiger and click on the meeting. They have the option to create a meeting note, which saves who made the note and any content they type into it / upload. This would allow Vtiger to act as a way to keep track of meetings as well as other forms of communication (email, etc).

Any idea if this is easily doable or not?

Thank you for your suggestion. This is very nice feature. I've added this in vtiger CRM 5.1.0 enhancement list. you can refer at
http://trac.vtiger.com/cgi-bin/trac.cgi/ticket/4031
As of now you can use the description field for the same.
